Can I disable all store options. My customers don't need it.

Yes you can from here - see image https://imgur.com/a/v19V0rd
Or go to Shop -> Shop Settings -> Tab name "Other shop settings" and from there
Disable online shop = Yes

And the shop section will disappear.
